 The base bourbon used was distilled in Indiana with a mash bill of 75% corn, 21% rye, and 4% malted barley.  It was a little over 4 years old when transferred to toasted French oak casks made by Kelvin Cooperage in Louisville, KY.  These casks are a little larger than traditional bourbon casks (approximately 60 gallons compared to 53 gallons).  Batch 1 spent 63 days in the French oak before the wanted flavor profile was reached.  The initial entry proof was 115.9 proof and only lost a little bit in the secondary finishing resulting in a bottling proof of 115.4.

Finished in Toasted White Oak Casks:

The base rye used was distilled in Indiana with a mash bill of 95% rye, and 5% malted barley.  It was a little over 4 years old when transferred to toasted white oak casks with a #1 char made by Kelvin Cooperage in Louisville, KY.  Batch 1 spent 45 days in the white oak before the wanted flavor profile was reached.  The initial entry proof was 120.6 proof and only lost a little bit in the secondary finishing resulting in a bottling proof of 119.2.

We finish our Kentucky bourbon in small batches, extending the spirit’s maturation with our signature Blackwood toasting process.
